Researchers developed curcumin-loaded gliadin-carboxymethyl chitosan composite nanoparticles (GCC NPs) using antisolvent precipitation. These GCC NPs show enhanced curcumin delivery and antioxidant activity, making them promising for food and pharmaceutical applications.
